mind-blowing vegan frittata

this recipe is pulled from Sahara Rose's ayruvedic cookbook, "Eat Feel Fresh." if you're into ayruveda, you can tweak the recipe depending on your "dosha" or energy type. if that's too woo-woo for you, just use whatever you have in your home already. we promise this will blow your mind. 
1 3/4 CUP WATER
1 1/3 CUP GARBANZO / CHICKPEA FLOUR
1 TSP TUMERIC
1 TSP SALT
2 TBSP NUTRITIONAL YEAST
1 TBSP OIL
2.5 CUP VEGGIES OF CHOICE

 

mix together the dry ingredients + water and let em sit while you prep the veggies. get those good and sautéed. then mix it all together in the pan and let it cook for 5 min til the edges brown. then bake at 400 F for 35 min. let rest for 10 min and ENJOY 😋
